#Glutenfree Why Gluten
Free? Part 4
Let’s talk about free radicals in the body and brain. Dr. Perlmutter,
the author of Grain Brain, concludes that most of us eat too much sugar and
simple carbohydrates—which also turn to sugar quickly—to let good fat do its
work. By the time the fat reaches the brain, it becomes free radicals that
cause inflammation in the body, stomach and brain, causing many diseases, such
as Arthritis, Alzheimer’s, dementia, Diabetes…. The list is very long.
My mother has diabetes. She started reading the book
yesterday and couldn’t take her nose out of it. She didn’t understand, however,
how carbohydrates affected her overall body health. So, I explained this to
her. There are two kinds of carbs: Simple and Complex. Simple carbs are food
such as bread, pasta, potatoes, rice, and virtually any white food. Complex
carbs are vegetables and fruit. But even fruit has sugar in it, so when you
choose your fruit, pick one that isn’t high in sugar, and only choose one piece
of fruit a day. The majority of our carbohydrate load should be in the fresh
vegetable section of the food chart. The rest of our diet should be protein.
Even sugar substitutes like agave nectar are sugar produced by fruit, so go
easy on it.
Perlmutter says that we shouldn’t be too concerned about the
amount of fat that is on our beef or pork or even the use of butter. The fat we
should stay away from is hydrogenated fat. Avoid it at all costs. Hydrogenated
fat is any oil that has been genetically modified to turn into butter. Examples
are most name brand peanut butters, margarines, and Crisco. He believes it
would better to use lard than to use genetically modified oils. His reasoning:
fat that is not been modified, can be used to create brain health, if your
sugar intake is low. Again, when you sugar intake is low, then the fat—even if
it is meat fat or milk fat—will be used by the brain as a good contributor to
brain health.
Personally, in my desire to move toward with this diet, to
try out its efficacy, I have had trouble limiting the amount of sugar I eat. It
seems that refining my diet to no breads, limited simple carbs, and adding more
protein isn’t a problem. I feel full and vibrant. It is in the late night I
want to eat something sweet.
Perlmutter says to expect to feel a withdrawal from the
sugars and white carbs. He believes that as wheat and sugar has been
genetically modified, scientists have added to the content of these little
demons an opiate effect in the brain. This means we are actually drugging
ourselves every we eat refined sugars and white flour. Even the whole grains
have been modified to create this same opiate effect in the brain. So, when you
get off of sugar, expect to have some withdrawal symptoms. As I try to stay
away from the sugar, I have to tell you, my brain and body are craving it like
an addict. I hope that by weaning off if it, I can titrate completely. But, I
have to tell you, that when I took sugar out of my diet before, I went cold
turkey, with just fruit for the first week, then no sweets after. I literally
sweated like an addict for two days.
